Torno Subito is celebrity chef Massimo Bottura doing what he does best: honoring tradition while playfully rewriting the rules. Chef Bernardo Paladini leads this new restaurant in the Design District, and describes himself as “an Italian guest in Miami.” Paladini has worked alongside Bottura for roughly 15 years, and the menu reflects a Floridian sensibility through local crab, key lime, and risotto with saffron cooked in shrimp bisque that feels like a nod to seafood paella.

Valentino Longo, from the Italian aperitivo bar Vice Versa, has created aperitivo-style drinks with effervescence, bitter, savory, and citrus components. Start with a cocktail, graduate to wine. The amuse bouche, a delightful Papà al Pomodoro, could be considered the soul of the restaurant, perfectly exemplifying the chefs’ zero-waste philosophy.

What to order

The tortellini, filled with cured pork in a creamy Parmigiano Reggiano sauce, is inspired by Massimo’s childhood memories of his nonna. The pasta is hand-rolled by a husband and wife team.

The sea bass “porketta” is a standout dish, rolled and cooked porchetta-style. Stuffed with pork bacon, it’s got crispy skin, and a side of grilled baby lettuce for balance. 

Oops, I Burned the Key Lime Pie is Paladini’s playful riff on Bottura’s iconic dessert, “Oops! I Dropped the Lemon Tart.” Key lime semifreddo, citric crumble, and lightly smoked lime ice cream make this a must-order.

The vibe

Set inside a century-old historic building with soaring ceilings and airy skylights, the bright pops of primary colors throughout, plus pastel-shaded plates and menu tie in to the Gucci florals seen on pillows and banquettes. Dress cute to match the ambiance at this casual-chic eatery.

Insider tip

Valet is just $5 outside the Moore Building — surprisingly affordable for Miami. Put the savings toward the Classics Remix tasting menu ($125) or the ten-course La Dolce Vita ($165).
